2005 Blanc de Noir

This wine was made from 100% Pinot Noir grown on our vineyard at Lake George. The grapes were hand picked, whole bunch pressed, cool fermented to dry, then triaged (yeast and sugar added, then bottled). The wine was left on lees in the bottle for 18 months before disgorging (removing yeast sediment) and liquering (sweetening) and crown sealed.
The wine is straw in colour with a fine persistent bead. The bouquet is complex with primary fruit characters mingling with biscuity, bready characters from development on yeast lees. The palate is rich and flavoursome, balanced by crisp acidity.
