2006 Shiraz Viognier

CHAMPION WINE OF THE 2007 CANBERRA REGIONAL WINE SHOW!

This wine is made from fruit (94% Shiraz, 6% Viognier) grown on our vineyard at Lake George. The grapes were hand picked on the 19th April 2006, cold soaked for 4 days, fermented to 30C, hand plunged 3 times a day, left on skins a further week before pressing, and matured in French Oak Barriques for 12 months. The wine has an intense nose of plum, spice, apricot, cedar and vanilla aromas and a rich and savoury palate with a long fine grain tannin finish. This wine will go with rich red meat dishes (stews or curries), and hard and washed rind cheeses. The wine will cellar for 5-7 years.
