2007 Pinot Noir
This wine was made from grapes grown at our vineyard at
Lake George. The fruit was cold soaked for 5 days, fermented
in an open fermenter with hand plunging 3 times a day, and
left on skins for 12 days post fermentation before pressing
off to mature in French oak barriques (20% new) for 11 months.
The wine is cherry-red colour showing gamey, black cherry,
plum, clove and licorice aromas with hints of vanilla and
toasty barrel notes. It has a rich ripe palate with a long,
silky tannin finish.
This wine suits rabbit, duck, game, truffles, mushrooms,
spring lamb and oily fish
