2006 Merlot Cabernet Franc
This wine is made from fruit grown at our vineyard at
Lake George. Merlot picked on the 19th April and Cabernet
Franc picked on the 12th April, fermentation was done separately,
cold soaked for 4 days, fermented to 28C, hand plunged 3
times per day, left on skins for a further 5 days before
pressing and matured in French oak barriques for 15 months.
The nose exhibits raspberry, fruitcake, stewed plums, spice
and violet aromas with vanilla oak overtones. The palate
is smooth, rich and savoury with fine balanced tannins and
a long finish. This wine will reward cellaring for up to
5 years.
It matches dishes like lamb, smoked chicken, pheasant and
white mould and hard cheeses.
