2007 Botrytis Pinot Gris (375ml)
Picked on 14 May 2007 after a long hot summer, the grapes
were heavily infected with noble rot (Botrytis cinerea),
very shrivelled and high in sugar. They were first whole
bunch pressed then transferred to a basket press to squeeze
the last sticky juice out. The wine was fermented slowly
until the right balance of alcohol and sugar was achieved.
It is a complex sweet wine showing nutty, apricot, raisin,
pear, apple, pineapple, rose and marmalade aromas. The palate
is very rich, warm and luscious balanced by a long acid
finish.
This wine matches rich but not too sweet desserts, fois
gras, smoked salmon and blue cheese. It will reward cellaring
for up to 10 years.
